Scope: A mixture for the preparation of dark custards of bread in an accelerated way.

Method of administration: The mixture is added in dry form with other dry formulation components when kneading the dough.

Composition: Flour rye, fermented malt, wheat gluten, ascorbic acid, stabilizer E-415, dye E150, enzymes.

Properties: Using the mixture allows to reduce the process of preparing dark custards of bread to one phase. It gives the finished products a pronounced malt taste and aroma, as well as the structure of the crumb, which is typical of these types of products.
